Apricot Anise Collins

INGREDIENTS
1 ripe apricot
45 mls gin
15 mls apricot brandy
5 mls Pernod
10 mls lemon juice
10 mls sugar syrup
soda water
2-3 star anise
METHOD
Slice the apricot into pieces and muddle half in a mixing glass. Add the alcohol, lemon juice and sugar syrup. Shake and strain into a tall glass. Top with soda water. Garnish with the star anise and remaining apricot slices.
